Recipe #16: Healthy Cheeseburger

Wow, have the Buns of Steel changed since the video days. I got the DVDs and they were awesome! Of course I did too much the first time. lol. It’s been a good week of really paying attention, but I must say it is work watching and thinking and preparing for the week. It really does help to be more conscious when you keep a food log You really must have a plan to make this lifestyle change. I am really learning to make a large amount and freeze it or use it for lunches by putting it in serving size containers. Then it’s easy when you get home to heat everything up and add a salad.
 
I have been making brown rice and whole wheat pasta so it’s ready in the fridge ahead of time. I really like chicken sausage that you can use to create a great stir fry, or pasta-based sauces to serve over whole wheat pasta or brown rice.
 
I add zucchini, summer squash, red peppers, chopped tomatoes and onions. To make more juice, add a jar of your favorite sauce. We also tried the Hungry Girl onion rings — oh my goodness they were awesome. I would have never thought to use Fiber One as a coating. The cook book is awesome. She really has some great recipes and treats.
 
From reading different cookbooks I made up some really great burgers that were 5 points on Weight Watchers with a cheese surprise and a great bag of baby mixed beans and carrots. 
 
Ingredients:
 
  • 1 pound of 90% lean beef
  • Italian herb seasoning grinder (to taste)
  • A few grinds of red pepper
  • Salt and pepper
  • Olive oil
  • Worcestershire sauce
 
Directions:
 
Make one small patty. Break up one slice white deli cheese sliced thin and place it in the center. Cover with another small patty. Seal sides. Cook in 1 tablespoon of olive oil and sprinkle with Worcestershire sauce for flavor. 1 lb or beef should make three burgers.
 
Fill half your plate with Bird’s Eye Baby Mixed Beans and Carrots — microwave with chicken broth for extra flavor and season with Italian herb grinder, salt and pepper. You can add one half cup basmati brown rice for a filling meal. It was so good!
