
My son turned 2 on September 9 and for his birthday we thought it would be fun instead of doing a party to just spend hours playing with him as a family. Things get so hectic and we are not usually all home at the same time so I really think he enjoyed it! Since there are only four of us, baking an entire cake seemed impractical and a bit unhealthy, so I put a twist on the traditional birthday cake. Corbin loves watermelon, so I sliced it up and left the edges so he could clearly tell what it was. Then I “iced” one piece to decorate and stuck the candles right in! This could really be used for anything as a treat. We sure enjoyed eating it and there was no need for guilt afterwards.
Watermelon “Cake”
1 Seedless Watermelon, sliced into circles
1 cup Fat-Free Vanilla Yogurt
1 cup Fat-Free Whip Cream
Whisk yogurt and whip cream together, then pour over watermelon as desired, or serve as a side of fruit dip.
(multiply recipe as needed)
